Rock cakes are a classic British dessert, traditionally made with butter, eggs, and other non-vegan ingredients. However, it is possible to make a vegan version of this tasty treat. This vegan rock cake recipe is easy to follow and yields delicious results.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup vegan butter, melted
  • 1/4 cup applesauce
  • 1/4 cup vegan milk
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup raisins, chopped
  • 1/4 cup vegan chocolate chips

Instructions

Preheat your oven to 350°F and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a separate bowl, whisk together the melted vegan butter, applesauce, vegan milk, sugar, and vanilla extract. Add the dry ingredients to the wet ingredients and stir until just combined.

Fold in the raisins and chocolate chips.

Scoop the batter onto the prepared baking sheet, using about two tablespoons per cake. Bake for 15 minutes, or until golden brown.

Allow the vegan rock cakes to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
